1. Prepare the Sauce
In a large saucepan, heat the olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté until the vegetables are soft and translucent, about 5-7 minutes.
2. Cook the Meat
Add the ground beef and ground pork to the saucepan. Cook until the meat is browned, breaking it up with a spoon as it cooks.
3. Add Wine and Tomatoes
Pour in the red wine and let it simmer for a few minutes until it reduces slightly. Then, stir in the crushed tomatoes, milk, bay leaf, salt, and pepper.
4. Simmer the Sauce
Reduce the heat to low and let the sauce simmer gently for at least 30 minutes, stirring occasionally. For a richer flavor, simmer for up to 2 hours.
5. Cook the Tagliatelle
While the sauce is simmering, bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the pasta.
6. Combine Pasta and Sauce
Add the cooked tagliatelle to the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
7. Serve
Serve the tagliatelle bolognese hot, topped with grated Parmesan cheese and freshly ground black pepper.
