Cook the Meat
Add the ground beef and ground pork to the saucepan. Cook until the meat is browned, breaking it up with a spoon as it cooks.
Simmer the Sauce
Reduce the heat to low and let the sauce simmer gently for at least 30 minutes, stirring occasionally. For a richer flavor, simmer for up to 2 hours.
Cook the Tagliatelle
While the sauce is simmering, bring a large pot of salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente. Reserve a cup of pasta water, then drain the pasta.
Combine Pasta and Sauce
Add the cooked tagliatelle to the sauce, tossing to combine. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
Serve
Serve the tagliatelle bolognese hot, topped with grated Parmesan cheese and freshly ground black pepper.
