Cook the Paccheri
Bring a large pot of salted water to a boil. Add the paccheri pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5-7 minutes.

Add Pancetta
Add the diced pancetta to the skillet and cook until crispy, about 4-5 minutes.

Incorporate Vodka
Pour in the vodka and let it simmer for about 2-3 minutes until it reduces slightly.

Add Tomato Passata
Stir in the tomato passata and let it cook for another 5 minutes, allowing the flavors to meld.

Finish the Sauce
Reduce the heat and add the heavy cream. Stir until the sauce turns a beautiful pink color. Season with salt and black pepper to taste.

Combine Pasta and Sauce
Add the cooked paccheri to the sauce and toss to coat. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.

Serve the paccheri hot, garnished with grated Parmigiano Reggiano on top.
