Prepare the Filling
Poach the Pacific cod in simmering water for about 5 minutes until cooked through. Allow to cool, then flake into small pieces. In a bowl, combine the flaked cod, ricotta cheese, lemon zest, and chopped fresh herbs. Mix well and season with salt and pepper to taste.

Make the Dough
In a large mixing bowl, combine the all-purpose flour and a pinch of salt. Create a well in the center and add the eggs and olive oil. Mix until a dough forms, then knead on a floured surface for about 5-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Assemble the Ravioli
Roll out the dough into thin sheets using a pasta machine or rolling pin. Place small mounds of the filling (about 1 tsp each) on one sheet of dough, leaving space in between. Brush around the filling with water, then place another sheet of dough on top and press down to seal. Cut into individual ravioli shapes using a pasta cutter or knife.

Cook the Ravioli
Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon.

Serve
Drizzle with basil oil and serve with a splash of tomato water. Garnish with additional fresh herbs if desired.
