    Prepare the Vegetables

    In a large pot, bring salted water to a boil. Blanch the asparagus pieces for 2-3 minutes until bright green and slightly tender. Remove and transfer to an ice bath. In the same pot, blanch the spinach for 1-2 minutes until wilted. Drain and chop coarsely. Set aside.

    Make the Mixture

    In a bowl, whisk together the eggs, milk, grated zucchini, grated Parmesan cheese, salt, and black pepper until well combined.

    Combine and Prepare for Baking

    Fold the blanched asparagus and chopped spinach into the egg mixture. Mix until evenly distributed. Preheat the oven to 180°C (350°F).

    Bake

    Grease individual ramekins or a baking dish with butter. Pour the vegetable mixture into the prepared dishes. Place them in a baking dish filled with hot water (bain-marie) and bake for 25-30 minutes or until the sformato is set and lightly golden on top.

    Serve

    Remove the sformato from the oven, let cool slightly, and serve warm. Optionally, drizzle with additional Parmesan cream if desired.
