Prepare the Roasted Potatoes
Preheat the oven to 400°F (200°C). Toss the diced potatoes with olive oil, paprika, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes or until golden and crispy.

Make the Olive Tomato Cream Sauce
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the halved cherry tomatoes and cook until they start to soften, about 5-7 minutes. Stir in the heavy cream, salt, black pepper, and chopped basil, and let it simmer for 5 minutes until the sauce slightly thickens.

Cook the Salmon
Season the Faroe salmon fillets with salt and pepper. In another skillet, heat 1 tablespoon of olive oil over medium-high heat. Place the salmon skin-side down and cook for 4-5 minutes until the skin is crispy. Gently flip the fillets and cook for another 3-4 minutes or until the salmon is cooked through.

Serve
Plate the roasted potatoes and top with the salmon fillet. Drizzle the olive tomato cream sauce over the salmon and garnish with additional basil if desired.
