Prepare the Spinach
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 3-4 minutes. Season with salt and pepper. Remove from heat and set aside.

Cook the Raviolo
Bring a pot of salted water to a boil. Carefully add the Cacio e Pepe Raviolo and cook according to package instructions, usually around 4-5 minutes. Once cooked, drain and set aside.

Cook the Filet Mignon
Season the filet mignon with salt and black pepper on both sides. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Sear the filet for 3-4 minutes on each side for medium-rare, or to your desired doneness. Let it rest for a few minutes before slicing.

Plate the Dish
On each plate, place a portion of sautéed spinach, top it with the cooked raviolo, and finally place the sliced filet mignon on top. Sprinkle grated Parmesan cheese over the dish before serving.
