Directions

  1. 1

    Prepare the Chicken

Preheat the smoker to 225°F (107°C). Remove the skin from the chicken drumsticks and push the meat down to create a lollipop shape.

  2. 2

    Wrap with Bacon

Wrap each chicken drumstick with two slices of bacon, starting from the thick end and spiraling down to the thin end, securing with toothpicks if necessary.

  3. 3

    Season the Chicken

In a bowl, mix together brown sugar, salt, black pepper, garlic powder, onion powder, paprika, and smoked paprika. Rub this mixture generously over the bacon-wrapped chicken lollipops.

  4. 4

    Smoke the Chicken

Place the chicken lollipops in the smoker and cook for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

  5. 5

    Glaze the Chicken

During the last 30 minutes of cooking, brush the BBQ sauce over the chicken lollipops, allowing it to caramelize.

  6. 6

    Serve

Once cooked, remove from the smoker, let them rest for a few minutes, and serve warm.
