Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 1 minute to create a roux. Gradually pour in the milk while continuing to whisk until the mixture thickens. Stir in the cheddar and gruyere cheese until melted and smooth. Remove from heat.
Assemble the Nachos
On a large baking sheet, spread the tortilla chips evenly. Pour the cheese sauce over the chips, ensuring they are well coated. Top with pico de gallo, corn, and dollops of sour cream.
Bake
Preheat the oven to 180°C (350°F). Bake the assembled nachos for about 10-15 minutes, or until the chips are crispy and warm.
Serve
Remove from the oven and drizzle the chimichurri sauce over the top. Serve immediately.
