Cook the Macaroni
Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce
In a saucepan over medium heat, melt the butter. Stir in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk, stirring constantly until the mixture thickens. Remove from heat and stir in the gruyère and cheddar cheeses until melted and smooth. Season with salt, black pepper, and paprika.

Combine Macaroni and Cheese Sauce
Add the cooked macaroni to the cheese sauce and stir until well coated.

Prepare for Baking
Preheat the oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased baking dish. Sprinkle the breadcrumbs evenly over the top.

Bake in the preheated oven for 25-30 minutes or until the top is golden brown and crispy.
