    Prepare the Ingredients

    Peel and thinly slice the potatoes. Chop the onion into small pieces.

    Cook the Potatoes and Onions

    In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and onions, and cook, stirring occasionally, until the potatoes are tender and lightly golden (about 15-20 minutes).

    Beat the Eggs

    In a large bowl, crack the eggs and beat them with salt and black pepper until well combined.

    Combine Ingredients

    Once the potatoes and onions are cooked, drain them from the oil and add them to the bowl with the beaten eggs. Mix gently to combine.

    Cook the Tortilla

    Wipe the skillet clean and add a little olive oil. Pour the potato, onion, and egg mixture into the skillet and cook on medium-low heat for about 5-7 minutes, until the bottom is set and golden.

    Flip the Tortilla

    Place a large plate over the skillet and carefully flip the tortilla onto the plate. Slide it back into the skillet to cook the other side for another 5-7 minutes.

    Once both sides are golden and the center is cooked, slide the tortilla onto a cutting board. Let it cool for a few minutes before slicing into wedges. Serve warm or at room temperature.
