    Prepare the Ingredients

    Chop the onion, bell pepper, tomato, and mince the garlic. Clean and prepare the seafood.

    Cook the Chicken and Chorizo

    In a large paella pan or skillet, heat olive oil over medium heat. Add the chicken thighs and chorizo, and cook until browned, about 5-7 minutes.

    Add Vegetables

    Add the chopped onion, garlic, and red bell pepper to the pan. Sauté until the onion is translucent, about 3-4 minutes.

    Incorporate Rice and Spices

    Stir in the rice, saffron, smoked paprika, salt, and black pepper. Cook for 2 minutes, stirring frequently.

    Add Broth and Simmer

    Pour in the chicken broth and bring to a simmer. Reduce heat to low and cook for about 10 minutes without stirring.

    Add Seafood

    Gently place the shrimp, mussels, and calamari on top of the rice mixture. Cover the pan and cook for an additional 10-15 minutes, or until the seafood is cooked and the rice is tender.

    Remove from heat and let the paella rest for 5 minutes. Serve with lemon wedges on the side.
