Prepare the Meat

Take the beef chuck roast and pat it dry with paper towels. Trim any excess fat, if necessary.

Season the Roast

In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper. Rub the spice mixture all over the roast, ensuring it's evenly coated.

Sear the Meat

In a large skillet, heat the olive oil over medium-high heat. Add the seasoned roast and sear on all sides until browned, about 4-5 minutes per side.

Roast the Meat

Transfer the seared roast to a roasting pan. Add the fresh rosemary and thyme on top. Cover the pan with aluminum foil.

Cook in Oven

Preheat the oven to 275°F (135°C). Place the roasting pan in the oven and cook for 4 to 6 hours, or until the internal temperature reaches 190°F (88°C).

Rest and Serve

Once cooked, remove the roast from the oven and let it rest for 30 minutes before slicing. Serve with your favorite sides.
