    Prepare the Base

    In a large paella pan or wide skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and minced garlic, and sauté until softened.

    Add Tomatoes and Rice

    Stir in the diced tomatoes and cook for a few minutes. Add the paella rice, stirring to coat the rice with the mixture.

    Add Stock and Seasoning

    In a separate pot, warm the fish stock. Add the saffron to the stock. Pour the warm stock into the rice mixture and season with salt and black pepper. Bring to a simmer.

    Add Seafood

    Once the rice is simmering, arrange the shrimp, mussels, and squid on top of the rice. Do not stir. Cover and cook for about 15-20 minutes, until the rice is tender and the seafood is cooked through.

    Add Peas and Rest

    In the last five minutes of cooking, sprinkle the frozen peas over the top. Once cooked, remove from heat and let it rest for 5 minutes.

    Serve

    Serve hot, garnished with lemon wedges on the side.
