Method

Roasting the Bone Marrow

    Preheat and Prepare

    Preheat your oven to 450°F (230°C). Season the bone marrow bones with salt and black pepper.

    Roast

    Place the seasoned bones upright on a baking sheet and roast for about 15-20 minutes until the marrow is soft and starts to separate from the bone.

Making Shortrib Marmalade

    Brown the Short Ribs

    In a large pot, sear the short ribs on all sides until browned. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onions and carrots, sauté until soft.

    Simmer

    Return the short ribs to the pot, add red wine, beef stock, bay leaves, thyme, salt, and pepper. Bring to a simmer and cook for 2-3 hours until the meat is tender.

    Shred and Reduce

    Remove the meat, shred it, and return to the pot to reduce the liquid until it thickens into a marmalade-like consistency.

Pickling the Mushrooms

    Prepare Pickling Brine

    In a saucepan, combine vinegar, water, sugar, salt, and crushed garlic. Bring to a boil.

    Pickle Mushrooms

    Add the mushrooms to the brine, remove from heat, and let them cool before refrigerating for at least 1 hour.

Assembly

    Serve

    To serve, place roasted marrow on a plate, top with shortrib marmalade, garnish with pickled mushrooms and radish slices. Serve with slices of baguette.
