    Boil the Eggs

    Place the eggs in a pot and cover them with water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 10-12 minutes.

    Prepare the Chorizo

    While the eggs are cooking, remove the casing from the chorizo and crumble it into a skillet. Cook over medium heat until browned and fully cooked, about 5-7 minutes. Drain excess fat and set aside to cool.

    Peel the Eggs

    Once the eggs have cooled, peel them under cold water to make it easier. Cut them in half lengthwise and remove the yolks.

    Make the Filling

    In a bowl, combine the egg yolks, cooked chorizo, mayonnaise, Dijon mustard, paprika, salt, and black pepper. Mix until smooth and well combined.

    Fill the Eggs

    Spoon or pipe the chorizo mixture back into the egg whites. Sprinkle with chopped parsley for garnish.

    Serve the Huevo Diablo chilled or at room temperature as a delicious appetizer.
