    Prepare the Caramel

    In a medium saucepan over medium heat, combine the granulated sugar and 1/4 cup of water. Stir gently until the sugar dissolves, then increase the heat and bring to a boil without stirring. Cook until the mixture turns a golden amber color. Quickly pour the caramel into a 9-inch round baking dish, tilting to coat the bottom evenly. Set aside to cool and harden.

    Make the Flan Mixture

    In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, olive oil, and sea salt. Blend until smooth and well combined.

    Bake the Flan

    Preheat the oven to 350°F (175°C). Pour the flan mixture over the hardened caramel in the baking dish. Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the flan dish. Bake for 50-60 minutes, or until set and a knife inserted in the center comes out clean.

    Cool and Serve

    Remove the flan from the water bath and let it cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight. To serve, run a knife around the edges of the flan, invert onto a serving plate, and drizzle with any remaining caramel.
