    Prepare the Poblano Puree

    Char the poblano peppers on a grill or in a broiler until blackened. Place in a bowl and cover with plastic wrap for 10 minutes. Peel the skins off, remove seeds, and blend with a little olive oil until smooth. Set aside.

    Make the Cilantro Lime Butter

    In a small bowl, mix softened butter, chopped cilantro, lime juice, salt, and black pepper. Refrigerate until ready to serve.

    Cook the Denver Steak

    Season the Denver steak with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for a few minutes before slicing.

    Sauté the Corn

    In the same skillet, add the corn kernels and sauté for 3-4 minutes until heated through and slightly caramelized. Season with salt and pepper to taste.

    Plating

    On a plate, spread a layer of poblano puree, top with sliced Denver steak, add sautéed corn on the side, and garnish with cilantro lime butter and micro cilantro.
