    Prepare the Ribs

    Preheat your oven to 150°C (300°F). Season the pork ribs generously with salt and black pepper on both sides.

    Bake the Ribs

    Place the seasoned ribs on a baking sheet lined with foil. Cover the ribs with another piece of foil and bake in the preheated oven for 2.5 to 3 hours, or until tender.

    Prepare the Glaze

    In a small saucepan, combine the pepper jelly with olive oil over medium heat. Stir until the jelly is melted and well combined. Remove from heat.

    Glaze the Ribs

    Once the ribs are tender, remove them from the oven and brush generously with the pepper jelly glaze.

    Finish Baking

    Return the glazed ribs to the oven and bake for an additional 15-20 minutes, uncovered, to caramelize the glaze.

    Prepare the Garnish

    While the ribs are finishing, chop the scallions finely. Roughly chop the fried peanuts.

    Remove the ribs from the oven, let them rest for a few minutes, then slice and serve topped with chopped scallions and fried peanuts.
