Chocolate Mousse

Preparation

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Set aside in the refrigerator.

Mix Egg Yolks and Sugar
In another bowl, whisk the egg yolks and granulated sugar until light and fluffy. Stir in the melted chocolate and vanilla extract until well combined.

Fold in Cream
Gently fold the whipped cream into the chocolate mixture until no streaks remain. Be careful not to deflate the mixture.

Chill
Spoon the mousse into serving cups and chill in the refrigerator for at least 2 hours or until set.
