Prepare the Filling
In a large skillet, heat a splash of oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent, about 3-5 minutes. Stir in the shredded chicken, milk, parmesan, espelette pepper, salt, and black pepper. Mix well and cook for an additional 5 minutes until heated through. Remove from heat and allow to cool.

Form the Croquettes
Once the filling has cooled, shape it into small cylinder or oval shapes, about 2 inches long. Dredge each croquette in flour, then dip in beaten eggs, and finally coat with breadcrumbs.

Fry the Croquettes
In a large frying pan, heat oil over medium-high heat. Once hot, carefully place the croquettes in the oil, frying in batches until golden brown and crispy on all sides, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the chicken croquettes hot with a drizzle of espelette honey and a side of aioli.
