Prepare the Anchovies
Clean the fresh anchovies by removing the heads and guts. Rinse them under cold water. Place them in a bowl and cover with white wine vinegar. Let them marinate in the refrigerator for at least 2 hours.

Make the Vinagreta
In a small bowl, mix olive oil, minced garlic, salt, and black pepper. Stir well and set aside.

Prepare the Avocado Puree
Scoop out the flesh of the ripe avocados into a blender. Add lime juice, a pinch of salt, and blend until smooth. Adjust seasoning to taste.

Assemble the Dish
Once the anchovies are marinated, drain them from the vinegar and arrange them on a serving plate. Drizzle the prepared vinagreta over the anchovies. Serve the avocado puree on the side and garnish with potato chips.
