    Make the Dough

    In a large bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the Filling

    In a saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook until the blueberries burst and the mixture thickens, about 5-7 minutes. Remove from heat and let cool.

    Make Whipped Farmer's Cheese

    In a mixing bowl, whip the farmer's cheese until smooth and creamy. Set aside.

    Roll Out Dough

    On a floured surface, roll out one disk of dough to about 1/8 inch thick. Cut into circles (about 4-5 inches in diameter). Repeat with the second disk.

    Assemble the Hand Pies

    Place a tablespoon of the blueberry filling and a teaspoon of whipped farmer's cheese on one half of each dough circle. Fold the dough over and press the edges to seal. Use a fork to crimp the edges.

    Prepare for Baking

    Preheat the oven to 375°F (190°C). Brush the tops of the hand pies with beaten egg and sprinkle with sliced almonds.

    Place the hand pies on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until golden brown.

    Prepare Burnt Honey

    In a small saucepan, heat honey over medium heat until it starts to darken and bubble, about 5 minutes. Remove from heat and let cool slightly.

    Drizzle the burnt honey over the warm hand pies and serve.
