Meatballs

Cheesy Grits

Method

Meatballs

  1. 1

    Prepare the Meatballs

In a large bowl, combine ground pork, ground lamb, minced garlic, parsley, cumin, paprika, salt, black pepper, egg, and breadcrumbs. Mix until well combined.

  2. 2

    Form Meatballs

Shape the mixture into meatballs about 1-2 inches in diameter.

  3. 3

    Cook the Meatballs

In a large skillet, heat oil over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 10-12 minutes.

Cheesy Grits

  1. 4

    Cook the Grits

In a saucepan, bring water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and simmer for about 15-20 minutes until thickened.

  2. 5

    Add Cheese

Stir in butter and cheddar cheese until melted and creamy. Keep warm.

Herb Salad

  1. 6

    Prepare the Salad

In a large bowl, combine mixed greens, cherry tomatoes, red onion, and corn.

  2. 7

    Dress the Salad

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over salad and toss to coat.

Garlic Herb Oil

  1. 8

    Infuse the Oil

In a small saucepan, heat olive oil over low heat. Add crushed garlic and fresh herbs. Cook gently for about 10 minutes, being careful not to burn the garlic.

  2. 9

    Strain and Store

Strain the oil to remove garlic and herbs. Store in a sealed container.
