Prepare the Prime Rib
Take the prime rib out of the refrigerator and let it sit at room temperature for about 1 hour before cooking. This helps it cook more evenly.
Season the Prime Rib
In a small bowl, mix the kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the mixture all over the prime rib, making sure to cover the entire surface. Drizzle with olive oil and rub it in.
Preheat the Oven
Preheat your oven to 450°F (232°C).
Roast the Prime Rib
Place the seasoned prime rib on a roasting pan, bone side down. Roast in the preheated oven for 20 minutes. After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
Rest the Meat
Once the desired temperature is reached, remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes before carving.
Serve
Carve the prime rib into slices and serve with mashed potatoes, mixed vegetables, au jus, horseradish cream sauce, and a garden salad.
