White Truffle Parmesan Dusted 6 Guy Fries Recipe

Roasted Garlic Aïoli

Preparing the Fries

    Cut and Soak Potatoes

    Wash and peel the Russet potatoes, then cut them into fry shapes. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Dry and Fry

    Drain the fries and pat them dry with paper towels. In a large pot, heat the vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 4-5 minutes per batch.

    Season and Dust

    Once fried, remove the fries from the oil and drain on paper towels. While still hot, drizzle with white truffle oil and sprinkle with Parmesan cheese, salt, and black pepper.

Making the Roasted Garlic Aïoli

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Cut the tops off the garlic cloves and drizzle with olive oil. Wrap in aluminum foil and roast for 30-35 minutes until soft.

    Blend Aïoli

    In a bowl, squeeze the roasted garlic into mayonnaise, add lemon juice and salt. Mix until smooth and creamy.
