Pork Wiener

Method

Pork Wiener Preparation

  1. 1

    Make the sausage mixture

In a large bowl, combine ground pork, pork fat, minced garlic, salt, black pepper, and paprika. Mix well until fully incorporated.

  2. 2

    Stuff the casings

Rinse the casings in cold water. Stuff the sausage mixture into the casings and twist to form individual sausages. Tie off the ends.

  3. 3

    Cook the sausages

Grill or poach the sausages until fully cooked, about 15-20 minutes. Set aside.

Korean Slaw Preparation

  1. 4

    Make the slaw

In a large bowl, mix together shredded cabbage, julienned carrot, chopped green onion, sesame oil, rice vinegar, soy sauce, and sugar. Toss until well combined. Refrigerate until serving.

Fries Preparation

  1. 5

    Fry the potatoes

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the cut potatoes until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Assembly

  1. 6

    Assemble the Glizzy

Place each grilled pork wiener into a challah bun. Top with a slice of Tillamook cheese, a generous amount of Korean slaw, dragon drizzle, Asian mustard, and garnish with scallion, garlic, and sesame crispies.

  2. 7

    Serve

Serve the assembled Glizzy with a side of 6 Guy fries.
