    Prepare the Potato Salad

    Boil fingerling potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly before slicing in half.

    Make the Dressing

    In a bowl, mix chipotle peppers, lime juice, and chopped cilantro. Add this mixture to the sliced potatoes and gently toss to combine.

    Prepare the Slaw

    In a large bowl, combine shredded cabbage and carrots. Toss with a light dressing of olive oil, salt, and pepper to taste.

    Cook the Salmon

    Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and pepper, then sear skin-side down for 4-5 minutes, flip, and cook for an additional 3-4 minutes until cooked through.

    On each plate, place a serving of the potato salad and slaw. Top with the seared salmon and a spoonful of tomato jam.
