Grilled Wahoo with Rock Shrimp Aguachile

Method

Preparation and Cooking

    Marinate the Wahoo

    In a bowl, mix olive oil, lime juice, minced garlic, chili flakes, salt, and pepper. Add the Wahoo fillets and marinate for at least 30 minutes.

    Prepare the Aguachile

    In another bowl, combine rock shrimp, cucumber, red onion, cilantro, lime juice, salt, and pepper. Let it sit for 15 minutes to allow the flavors to meld.

    Cook the Broccoli

    Steam the broccoli florets until tender, about 5-7 minutes. Set aside.

    Grill the Wahoo

    Preheat the grill to medium-high heat. Grill the marinated Wahoo fillets for about 4-5 minutes on each side or until cooked through and flaky.

    Prepare the Relish

    In a bowl, mix black beans and roasted butternut squash. Season with salt and pepper to taste.

    Assemble the Dish

    On a plate, layer the cooked red rice, steamed broccoli, and top with the grilled Wahoo. Spoon the rock shrimp aguachile over the fish and serve with the black bean and butternut squash relish on the side.
