    Prepare the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt, and cook, stirring frequently, until the onions are caramelized and golden brown (about 30-40 minutes).

    Add Broth and Simmer

    Once the onions are caramelized, add the dry white wine, beef broth, thyme, bay leaves, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for about 30 minutes.

    Prepare the Bread

    While the soup is simmering, slice the French baguette into 1-inch thick slices. Toast the slices in the oven until they are golden brown.

    Serve the Soup

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top, and generously sprinkle with shredded Gruyère cheese.

    Broil the Cheese

    Place the bowls under the broiler until the cheese is bubbly and golden brown (about 2-3 minutes). Serve hot.
