    Chop the bell pepper and onion into small pieces. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the onion and bell pepper until soft, about 5-7 minutes.

    In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Add Spinach

    Add the fresh spinach to the sautéed vegetables and cook until the spinach is wilted, about 2-3 minutes.

    Pour the egg mixture over the sautéed vegetables and spinach in the skillet. Cook on low heat until the edges start to set, then sprinkle the cheddar cheese on top.
