Duck Confit, Fig Jam, and Pizzetta Components

Preparation Steps

    Prepare the Duck Confit

    In a large pot, season the duck legs with salt, black pepper, and thyme. Cover with duck fat and cook on low heat for about 2 hours until tender. Let cool in the fat, then shred the meat and set aside.

    Make the Fig Jam

    In a saucepan, combine chopped figs, sugar, and lemon juice. Cook over medium heat until the figs break down and the mixture thickens, about 15-20 minutes. Let cool.

    Prepare the Pizzetta

    Preheat the oven to 475°F (245°C). Roll out the pizza dough into individual pizzetta rounds. Place on a baking sheet.

    Assemble the Pizzetta

    Spread a layer of fig jam on each pizzetta, then top with shredded duck confit and crumbled goat cheese.

    Bake

    Bake the pizzetta in the preheated oven for about 10-12 minutes, or until the crust is golden and the cheese is slightly melted.

    Top the baked pizzetta with pickled red onions, arugula, and a drizzle of pomegranate molasses. Serve warm.
