Crispy Fried Calamari

Preparation

Prepare the Calamari
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Toss the calamari rings in the mixture until well coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).

Fry the Calamari
Working in batches, fry the calamari for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make the Orange-Sesame-Chili Sauce
In a small saucepan, combine the orange juice, soy sauce, sesame oil, honey, and red chili flakes. Bring to a simmer over medium heat and cook for 5 minutes until slightly thickened.

Prepare the Charred Scallion Lemon Aïoli
In a food processor, combine the mayonnaise, charred scallions, lemon juice, minced garlic, and salt. Blend until smooth.

Serve
Serve the crispy fried calamari with the orange-sesame-chili sauce drizzled over it and a side of charred scallion lemon aïoli.
