Cajun Dusted Fried Oysters

Method

Preparation

  1. 1

    Prepare the Slaw

In a large bowl, combine shredded cabbage, shredded carrots, green onions, and cilantro. In a separate bowl, whisk together mayonnaise, buttermilk, vinegar, sugar, salt, and pepper. Pour the dressing over the slaw mixture and toss to combine. Refrigerate until serving.

  2. 2

    Prepare the Creole Ranch

In a small bowl, mix together mayonnaise, sour cream, ranch dressing mix, and hot sauce. Adjust seasoning to taste and refrigerate until needed.

  3. 3

    Prepare the Oysters

In a shallow dish, mix together flour, cornmeal, Cajun seasoning, salt, and black pepper. Dip each oyster into the buttermilk, allowing excess to drip off, then dredge in the flour mixture until well coated.

  4. 4

    Fry the Oysters

In a large deep skillet or fryer, heat vegetable oil to 350°F (175°C). Fry the oysters in batches for about 2-3 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

  5. 5

    Serve

Serve the fried oysters hot with Creole Ranch and slaw on the side.
