Prepare the Filling
In a bowl, combine the shredded chicken, Monterey Jack cheese, salt, and black pepper. Mix well to combine.

Heat the Tortilla
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place one flour tortilla in the skillet.

Add the Filling
Spoon half of the chicken and cheese mixture onto half of the tortilla. Fold the other half over to create a half-moon shape.

Cook the Quesadilla
Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with remaining tortillas and filling.

Serve
Cut the quesadillas into wedges and serve with sour cream, fire roasted salsa, and guacamole on the side.
