Cook the Meats
In a large pot or Dutch oven, heat olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Then, add the diced chicken breast and cook until no longer pink.

Add the Spices
Stir in the Cajun seasoning, salt, and black pepper, mixing well to coat the meat and vegetables.

Combine Rest of Ingredients
Add the diced tomatoes (with juices), chicken broth, and rice to the pot. Bring to a boil.

Simmer
Reduce heat to low, cover, and let simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

Add Shrimp
In the last 5 minutes of cooking, stir in the shrimp. Cook until the shrimp turn pink and are cooked through.

Finish and Serve
Remove from heat, and stir in the green onions and parsley. Add hot sauce to taste. Serve hot.
