Prepare the Potatoes
Peel the Russet potatoes and cut them into 1/4 inch thick strips. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels. This helps achieve crispy fries.

Heat the Oil
In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C). A thermometer is recommended for accuracy.

Fry the Potatoes
Carefully add a handful of potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until they are golden brown.

Drain and Season
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt and pepper to taste.
