Preparation
1. Make the Pistachio Pesto
In a food processor, combine pistachios, basil, garlic, Parmesan cheese, lemon juice, salt, and black pepper. Pulse until finely chopped. With the processor running, gradually add the olive oil until the pesto reaches your desired consistency. Taste and adjust seasoning if necessary.
2. Prepare the Sausage
In a skillet over medium heat, cook the sweet Italian sausage until browned and cooked through, about 8-10 minutes. Remove from heat and let cool slightly, then slice into rounds.
3. Assemble the Dish
On a serving platter, layer slices of fresh mozzarella, the sliced sausage, and drizzle generously with the pistachio pesto. Finish with a drizzle of extra virgin olive oil. Serve immediately.
