Preparation
Make the Cannoli Shells
In a mixing bowl, combine flour, sugar, cocoa powder, and salt. Add butter and mix until crumbly. Stir in egg yolks and white wine until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
Roll and Cut the Dough
On a floured surface, roll out the dough thinly. Cut into 4-inch circles. Wrap each circle around a cannoli tube and seal the edges with a bit of water.
Fry the Shells
Heat oil in a deep pan over medium heat. Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Prepare the Filling
In a bowl, mix ricotta cheese, powdered sugar, and vanilla extract until smooth. Fold in mini chocolate chips.
Fill the Cannoli
Once the shells are completely cooled, pipe or spoon the filling into each shell.
Garnish
Sprinkle chopped pistachios on the ends of the filled cannoli.
