    Marinate the Chicken

    In a bowl, combine chicken breasts with limoncello, salt, and black pepper. Let it marinate for at least 30 minutes.

    Prepare the Vegetables

    Slice the red onion and halve the grape tomatoes. Set aside.

    Cook the Chicken

    In a large skillet, heat 2 tablespoons of EVOO over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until cooked through.

    Add Vegetables

    Once the chicken is cooked, add the red onion and grape tomatoes to the skillet. Sauté for an additional 5 minutes until the vegetables are tender.

    Add Pine Nuts and Pesto

    Stir in the pine nuts and basil pesto, cooking for another 2-3 minutes until everything is well combined and heated through.

    Finish with Cheese

    Top each chicken breast with slices of fresh mozzarella and sprinkle with Pecorino Romano. Cover the skillet for a minute to melt the cheese.
