Baking Instructions

  1. 1

    Prepare the Dough

In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Gradually add the yeast mixture and 2 tablespoons of olive oil. Mix until a shaggy dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If the dough is too sticky, sprinkle a little flour as needed.

  3. 3

    First Rise

Place the dough in an oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

  4. 4

    Shape the Dough

After the dough has risen, punch it down and transfer it to a greased baking sheet. Stretch and shape the dough into a rectangle or circle, about 1-inch thick.

  5. 5

    Second Rise

Cover the shaped dough with a damp cloth and let it rise for another 30 minutes.

  6. 6

    Preheat and Prepare Toppings

Preheat your oven to 425°F (220°C). While the oven is preheating, use your fingers to create dimples all over the surface of the dough. Drizzle the remaining olive oil over the top and sprinkle with rosemary and coarse sea salt.

  7. 7

    Bake

Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown.

  8. 8

    Cool and Serve

Remove from the oven and let it cool on a wire rack. Cut into squares or slices and serve warm.
