Prepare the caramel

In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves, then stop stirring and let it simmer until it turns golden brown. Carefully pour the caramel into a round flan mold, tilting the mold to coat the bottom evenly. Allow it to cool and harden.

Blend the flan mixture

In a blender, combine sweetened condensed milk, evaporated milk, cream cheese, eggs, and vanilla extract. Blend until smooth and well combined.

Bake the flan

Pour the flan mixture over the hardened caramel in the mold. Place the mold in a larger baking dish and fill the dish with hot water until it reaches halfway up the sides of the flan mold. Bake in a preheated oven at 350°F (175°C) for about 50-60 minutes, or until the flan is set and a knife inserted comes out clean.

Cool and refrigerate

Remove the flan from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Prepare the toppings

In a skillet, toast the walnuts over medium heat until fragrant and golden. Allow them to cool. To serve, invert the flan onto a serving plate, and top with toasted walnuts, amarena cherries, and fresh mint leaves.
