Pasta and Seafood
Method
Preparation and Cooking
- 1
Make the Pasta
In a large mixing bowl, combine the flour and eggs. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- 2
Prepare the Seafood
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant. Add clams and cook until they start to open, about 5 minutes. Then, add the crabmeat and season with salt and pepper. Stir in chopped parsley and toasted pine nuts.
- 3
Roll and Cut the Pasta
After resting, roll out the pasta dough using a pasta machine or a rolling pin until thin. Cut into strips to form chitarra pasta.
