Pasta and Seafood

Method

Preparation and Cooking

  1. 1

    Make the Pasta

In a large mixing bowl, combine the flour and eggs. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

  2. 2

    Prepare the Seafood

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant. Add clams and cook until they start to open, about 5 minutes. Then, add the crabmeat and season with salt and pepper. Stir in chopped parsley and toasted pine nuts.

  3. 3

    Roll and Cut the Pasta

After resting, roll out the pasta dough using a pasta machine or a rolling pin until thin. Cut into strips to form chitarra pasta.

  4. 4

    Cook the Pasta

In a large pot of boiling salted water, cook the pasta for about 3-4 minutes until al dente. Drain and add it to the skillet with the seafood mixture.

  5. 5

    Combine and Serve

Toss the pasta with the seafood mixture to combine thoroughly. Plate the pasta and top with sliced Parma prosciutto. Garnish with additional parsley and pine nuts if desired.
