Make the Pasta
In a mixing bowl, combine the flour and salt. Make a well in the center, add the eggs, and mix together until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Simmer the Sauce
Stir in crushed tomatoes, red wine, oregano, basil, and black pepper. Bring to a simmer, reduce heat to low, and let it cook for 1 hour, stirring occasionally.

Roll and Cut the Pasta
After the dough has rested, roll it out into thin sheets using a pasta machine or rolling pin. Cut into tagliatelle strips. Dust with flour to prevent sticking.

Cook the Pasta
Bring a large pot of salted water to a boil. Add the tagliatelle and cook for about 3-4 minutes until al dente. Drain and toss with the ragu sauce.
