Preparation

1. Make the Pasta

In a mixing bowl, combine the flour and salt. Make a well in the center, add the eggs, and mix together until a dough forms. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

2. Prepare the Ragu

In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Add the minced garlic, ground beef, and pork sausage. Cook until browned.

3. Simmer the Sauce

Stir in crushed tomatoes, red wine, oregano, basil, and black pepper. Bring to a simmer, reduce heat to low, and let it cook for 1 hour, stirring occasionally.

4. Roll and Cut the Pasta

After the dough has rested, roll it out into thin sheets using a pasta machine or rolling pin. Cut into tagliatelle strips. Dust with flour to prevent sticking.

5. Cook the Pasta

Bring a large pot of salted water to a boil. Add the tagliatelle and cook for about 3-4 minutes until al dente. Drain and toss with the ragu sauce.

6. Serve
