Roast the Beets
Preheat your oven to 400°F (200°C). Wash and trim the beets, then wrap each in aluminum foil. Place on a baking sheet and roast for about 45-60 minutes, or until fork-tender. Remove from the oven, let cool slightly, and peel the skins off.

Prepare the Salad
Once the beets are cooled and peeled, slice them into wedges. In a large bowl, combine the sliced beets and watercress.

Make the Dressing
In a small bowl, whisk together olive oil, balsamic vinegar, salt, and black pepper.

Combine and Serve
Drizzle the dressing over the beet and watercress mixture. Toss gently to coat. Top with crumbled goat cheese before serving.
