    Prepare Oysters

    Preheat your oven to 400°F (200°C). Carefully shuck the oysters and place them on a baking tray.

    Sauté Spinach and Garlic

    In a skillet, melt the butter over medium heat, then add minced garlic. Sauté for 1 minute, then add chopped spinach and cook until wilted. Remove from heat.

    Mix Toppings

    In a bowl, combine the sautéed spinach and garlic with grated Parmesan cheese and bread crumbs. Mix well.

    Prepare Zabaglione

    In a heatproof bowl, whisk together egg yolks and sugar. Gradually add Prosecco while whisking. Place the bowl over a pot of simmering water and whisk continuously until the mixture thickens and triples in volume.

    Assemble and Bake

    Spoon the spinach mixture onto each oyster, then drizzle with zabaglione. Bake in the preheated oven for about 10-12 minutes, or until golden and bubbly.
