Directions to Prepare Asparagus Ravioli

    Prepare the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Mix with a fork until combined and then knead until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    While the dough is resting, steam the wild asparagus for about 5 minutes until tender. Chop finely and mix with grated parmesan. Season with salt and pepper to taste.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll out each piece thinly using a pasta machine or a rolling pin on a floured surface.

    Fill the Ravioli

    Cut the rolled dough into squares or circles. Place a teaspoon of the asparagus filling onto the center of each piece. Moisten the edges with water, fold over, and press to seal.

    Cook the Ravioli

    Bring a pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the top. Remove with a slotted spoon.

    Prepare the Grilled Asparagus and Mushrooms

    While the ravioli is cooking, grill the remaining asparagus and lion's mane mushrooms in olive oil over medium heat for about 5-7 minutes until tender and slightly charred.

    Plate the ravioli topped with grilled asparagus and lion's mane mushrooms. Sprinkle additional grated parmesan on top and drizzle with olive oil if desired.
