    Cut the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips (approximately 1/4 inch thick) to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat them dry with paper towels.

Cooking

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add a batch of the dried fries to the hot oil. Fry until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil and sprinkle with salt, black pepper, and grated Parmesan cheese. Toss to coat evenly.
