Method

Chicken Preparation

1

Sear the Chicken

Preheat your oven to 400°F (200°C). Season the Statler chicken breasts with olive oil, salt, black pepper, and fresh thyme. Heat a large oven-safe skillet over medium-high heat and sear the chicken breasts for about 3-4 minutes on each side until golden brown.

2

Roast the Chicken

Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Remove from the oven and let it rest.

Vegetable Hash Preparation

3

Cook the Vegetables

In another skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally until they begin to soften.

4

Add Sausage and Other Vegetables

Add the diced chourico sausage, bell pepper, red onion, and minced garlic to the skillet. Season with salt and black pepper. Cook for an additional 8-10 minutes until the vegetables are tender and the sausage is cooked through.

Roasted Chicken Sauce Preparation

5

Make the Sauce

In the same skillet used for the chicken, melt 2 tablespoons of butter over medium heat. Pour in the chicken stock and add the fresh thyme. Bring to a simmer and let it reduce slightly for about 5 minutes. Season with salt and black pepper to taste.

Assembly

6

Plate the Dish

On a serving plate, place a generous portion of the vegetable hash. Top it with the sliced roasted Statler chicken and drizzle the roasted chicken sauce over the top. Serve warm.
