Make the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove and let cool.

Prepare the cheesecake filling
In a large mixing bowl, beat the mascarpone cheese and cream cheese until smooth. Gradually add in the sugar and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Finally, mix in the heavy cream until smooth.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour. Refrigerate for at least 4 hours or overnight.

Prepare the strawberry topping
In a bowl, combine sliced strawberries, Grand Marnier, and granulated sugar. Toss gently to coat. Let sit for 30 minutes to allow the flavors to meld.
Serving

Serve the cheesecake
Once the cheesecake is chilled, remove it from the springform pan. Slice and serve with the macerated Grand Marnier strawberries on top.
