Steak Preparation

    Grill the Steak

    Preheat the grill to medium-high heat. Season the steak with salt and pepper. Grill for about 4-5 minutes on each side for medium-rare, or longer depending on your desired doneness. Remove from grill and let rest.

    Caramelize the Onion

    Slice the onion thinly. In a skillet over medium heat, add a bit of olive oil and the sliced onion. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

Roasted Garlic Aioli Preparation

    Make the Aioli

    Roast the garlic cloves in aluminum foil with a drizzle of olive oil for about 20 minutes at 400°F (200°C) until soft. Let cool, then mash the garlic and mix with mayonnaise, lemon juice, olive oil, salt, and pepper in a bowl until smooth.

Assemble the Panini

    Build the Panini

    Spread a generous amount of roasted garlic aioli on one side of each slice of panini bread. Layer with roasted tomatoes, crisp red leaf lettuce, sliced grilled steak, caramelized onions, and crumbled blue cheese. Top with the second slice of bread.

    Heat a panini press or skillet over medium heat. Grill the assembled panini for about 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted.
